A heaping helping of healthy eating!

I got a new Weight Watchers cookbook for my birthday and I was initially a little wary of it because it's more of a three-ring binder than a book, and "removable pages" doesn't exactly scream credibility and professionalism. In any case, I finally cracked it open on New Year's Eve when I got an itch to cook and I discovered that, despite the "book's" total lack of aesthetic quality, it boasts some darn fine recipes. When my dad came home for lunch on Sunday I put on my best Julia Child face and whipped up a delightful 8 Point (that's about 570 calories) lunch, complete with:
Spanakopita - spinach, feta cheese, shallots, and dill all neatly bundled in (very temperamental) phyllo dough
Feta-topped chicken - nothing says "fine Greek dining" like feta and sun-dried tomatoes, and nothing says "lazy" like broiled chicken
Banana cream pie - so the "cream" on top was actually more of a yogurt Jell-O and the "crust" barely covered the bottom of the pie pan...my brother ate two slices so I'd count it as a victory

The super thing about my diet is that I get to be creative when I cook. Kitchen catastrophes can (and often do) occur and then I feel obligated to waste precious calories on sub par cuisine just so that it doesn't go to waste, but when I strike culinary gold, my inventor's spirit is refreshed. I recently decided to try my hand at some diet French toast and it was perfect - crispy on the outside and soft on the inside. And, since my creation contains only 122 measly calories and five precious grams of fiber, I can eat it whenever the heck I want. Oh how blest, the life of a dieter!
